Cheese pizza + bell peppers + pepperoncinni = 5 out if 5 slice experience at Fremont’s Kylie’s Chicago pizzeria. I am still dreaming about this pie too.

Benito’s Chicago Eatery is a new joint in Ballard and aims to serve up classic Chicago fare. Before walking in I could smell the bounty awaiting and feel the warmth of ovens roaring. Upon entry there rested several patrons dining on giant hot-dogs, including some sloppy overzealous kids.
Going straight for the pizza, cheese-tomatoes-and bellpeppers (pictured above) comes my thoughts. First the pros: chunky tomatoes and ooodles of cheese put this pie on par with other Chicago pies in Chicago. The cons: not sure if the crust was made with cornmeal but it missed that flaky pie quality and was too fluffy/thick - while I dug the tomatoes there wasn’t a real sauce on the pie. Perhaps I should have asked for sauce or extra tomatoes. Apparently Benito’s is re-working their menu and recipe, that’ll mean a revisit.

Lou Malnati’s is a staple Chicago pizza joint and it’s solid. Photo above of cheese and bell peppers portends the major gut-bomb.

Chicago pizza isn’t even the best of itself. Giardano’s is at best an OK pie.

And there it was, a staple of Chicago pizza
mislead and failed.
A shadow of the rumor that proceeded it. A set of circumstances and instances that unravelled to reveal a broken beaten pie. Culture eats death.
